Griffiths started his career out at Livingston FC, at the tender age of 16 years. Griffiths had a trial at West Brom that year but due to Tony Mowbray leaving, it meant that any possible transfer was called off. He spent three years at Livingston from 2006-2009 scoring 22 goals in 47 games. His impressive scoring record earnt him a move to Dundee, partly due to Livingston's financial problems in a move with cost £150,000. Griffiths turned down Hearts due to their "defensive playing style" and his support of Hibernian, Hearts main rivals. So far he has repayed Dundee with 15 goals in 38 games.

Griffiths has appeared for Scotland at youth levels for the U-19's, U-21's and the Scottish B side. Griffiths scored for the Scottish B side in a 3-0 win over the Northern Ireland B side.
